![]() ![]() After a few years of making this jam, I have decided to add pectin to it so that it sets better otherwise, you get a fairly runny jam (which I like, but with Western Concord Grapes, I think additional pectin is helpful). This is the base of my go-to recipe for using up yummy Concord grapes at the end of summer. I used to boil with no pectin, but the liquid boiled down so much that it reduced the liquid by 2 or 3 jars, I think. Add 1 pouch of liquid pectin, stir constantly for 1 minute and you're done. I combine the pureed grapes and sugar together to a rolling boil that you can't stir down. I do that on one day and either freeze or finish up on day 2. I then use my mesh colander and sieve to a puree (I tried using a ricer but the seeds were too big). I've been making grape jam for several years now (first slipping the skins) and found that after I remove the stems and wash the grapes, I put them in a large pot with a touch of water (1/4 cup?) and boil down until the skins separate which works great and reduces the time. Also added can of pure grape juice for sweetener? Can I salvage my grape sluge? I just tried to re-can my Concord grape, adding more pectin cuz don’t want to add sugar, I gently cooked it but for more than 60 mins & it didn’t set up. How much liquid pectin would you add if you wanted to thicken this up? I add a pouch of Sure Jell Certo liquid pectin to this recipe (added as soon as I take the boiling mixture off the heat), and it helps the jam set nicely. Live in the Midwest (northern Minnesota) and my Concord grapes are nice and sweet when harvested right after our firs frost, but they don’t have enough natural pectin to set without pectin. Slipping the skins takes time but it is worth it for both flavor and color. Make this every year with our Concord grapes and it turns out perfect every time. Would pulp be to thick for jelly bag.? No info out there. But then you have to make sure to be careful to not use bottom? There must be a process for this. I have discovered if you let pulp sit in ftidge 48hrs the tartrate will all go to bottom. It is very displeasing to have gritty jam. Gritty crystals in grape jam are a natural substance that occur in jams, jelly, wine. ![]()
